How to Peel Ginger

Fresh ginger has an uneven and often knobby surface that can make it tricky to peel. A vegetable peeler may seem like the obvious choice and it can work, but you’ll have trouble maneuvering a peeler around ginger’s bumpy surface without removing more flesh than peel.

 

To get rid of the peel without sacrificing any of the actual ginger, slide the edge of a teaspoon across the ginger’s surface. The skin should peel away without wasting any of the flesh.

The spoon removes more skin, less flesh.

The peeler removes the skin, along with a good bit of the flesh.
