I have the extremely good fortune of being buddies with one of the best bakers around, my culinary school classmate, Becky. She sat directly behind me at L’Academie de Cuisine and we bonded over timed omelet-making tests, cost-per-serving analyses and Percy.
After culinary school, Becky went on to pastry school and then spent several weeks learning advanced cake decorating techniques in Illinois. The result — she can buttercream, batter and whip with the best of them and I occasionally get to reap the rewards by enjoying one of her amazing cakes. Her buttercream-frosted vanilla cake filled with lemon curd and raspberries is my all-time favorite dessert in the universe. Seriously, if Bobby Flay challenged Becky to one of his Throwdowns!, she would kick his chipotle-addicted butt!
